Seitan stew (Joan Bauzà)


INGREDIENTS

 2 ONIONS
2 OR 3 TOMATOES
1 KG OF POTATOES
2 EGGS
50 GR HAZELNUTS
2 OR 3 MUSHROOMS
1 1/2 GARLIC BULBS
25 GR OF  OAT FLAKES
FLOUR
1 PACKAGE OF SEITAN
1/2 JAR TEMPEH
100GR OF TEXTURED SOYBEAN
2 EGGS
50 GR HAZELNUTS
DRY WINE
WATER
OLIVE OIL
THYME
PARSLEY
MARJORAM
PEPPER
SALT


Heat some water until it  boils. Cover the soybean with the boiling water. Let it settle for 10m. Strain it.
Cut in tiny pieces: the seitan, one onion, the parsley, 3 or 4 cloves of garlic and  the hazelnuts.
Mix it with the soybeans, the oatflakes, salt, pepper, the thyme, the beaten eggs and 3 or 4 tablespoons of flour.
Put some flour on a plate and to prepare the balls take  spoonfulsof the above mixture and coat them with flour.
Fry them in a frying pan with some olive oil.
Put some oil in an  earthenware pot and sitr fry for a few minutes: 1 onion, 1 bulb of garlic and some parsley. Add the tomatoes, the mushrooms, the tempeh, the marjoram, salt and pepper. Add the dry wine, the balls and three bowls of water and simmer.
Cut  the potatoes and stir fry them. Then add them to the stew . Simmer  for 20-25 minuts ans serve it hot.
